Recipe of the Week: Pasta Baby!

What better way to kick off Bella Mamma's Recipe Guide than with a little bit of pasta?! 

Once your little one is ready for some texture, then the best way to start adding some is with pasta. Recipes are generally quick and easy and packed with lovely nutrients. A winning combo for any mum!

When we first introduced pasta to our little ones, we used Boots Baby Organic Mini Pasta Shells. Of course, you can upgrade to normal pasta when you feel your little one is ready and these recipes can be enjoyed by all the family (just add a little salt and pepper)   

This week we're jumping in with 3 delicious recipes tried and tested in our own Italian-Irish kitchens! 

#1 Spinach Pasta

A simple classic and a great way to add some superhero spinach to your little one's diet. Courgettes also work really nicely in this recipe. 

  • 200g fresh spinach
  • 30g mini pasta shells or linguine
  • 15g un-salted butter
  • 2 tbsp full fat milk
  • 2 tbsp cream cheese
  • 4 tbsp parmesan cheese
How to make:
  • Cook the pasta as per pack instructions
  • Wash the spinach and cook/steam 
  • Melt the butter in a pan and saute the spinach
  • Next, add the cheeses and milk 
  • Mix in the pasta & serve

 #2 Tomato & Basil Pasta 

Essential ingredients in any Italian household - tomatoes and basil are cheaply available and can quickly add bags of flavor. Forget jars sauces, whip up this tomato sauce and freeze so you always have something on standby. 

·         tiny alphabet pasta or penne 
For the tomato sauce
·       400g fresh/canned tomatoes
·       1 garlic clove (crushed)
·       1 tbsp olive oil
·       1 tbsp tomato puree
·       fresh basil
·       parmesan cheese
How to make:
  • Heat the oil in a pan, add the garlic, then gently fry for 1 min
  • Tip in all the other ingredients, except the basil, then bring to the boil
  • Reduce the heat, then simmer uncovered for 5 mins, stirring occasionally
  • To finish, tear the basil leaves, then stir into the sauce

#3 Chicken & Pesto Pasta 

This is a personal favourite and so easy to make! We'll do a post on how to make your own pesto at home, but in the mean time, just pick up a jar in the supermarket!

  • 300g pasta (fusilli works well)
  • 200g pesto
  • 200g cooked chicken
  • parmesan
How to make:
  • Cook the pasta according to the packet instructions
  • Once the pasta is cooked drain well
  • Now put the pasta back in the pan and add the pesto - stir over a gentle heat
  • Now divide the pesto pasta between four bowls
  • Top each portion with some cooked chicken
  • Serve with grated parmesan (optional)
